  • 2-4 tablespoons of honey: Adjust the sweetness to your preference.
  • 1/2 cup of lemon juice: Adds a refreshing tang and helps preserve the gummies.
  • opt 1/4 tsp ginger powder: Ginger is a great digestion aid. But kids sometimes find it spicy so omit if you don't want a bit of zing.

Step by Step Instructions

Follow these easy steps to create your elderberry tea gummies:

  1. Brew the Elderberry Tea: Start by brewing 2 cups of elderberry tea. (if you are using the powdered ginger add that in now) Allow it to steep for about 5-30 minutes to ensure a rich flavor. Once brewed, let half of it cool to room temperature.
  2. Mix the Gelatin: In a small saucepan, pour the cooled 2 cups of elderberry tea. Sprinkle the gelatin over the tea and let it sit for about 5 minutes. This allows the gelatin to "bloom," which is essential for a smooth texture. (I like to whisk it immediately after I combine the two to ensure zero clumps)
  3. Heat the Mixture: Place the saucepan over low heat, stirring constantly until the gelatin dissolves completely. Be careful not to boil the mixture, as this can affect the gelatin's setting ability.
  4. Add Honey & Lemon Juice: Once the gelatin is fully dissolved, remove the saucepan from the heat. Stir in the honey and lemon juice until fully combined.
  5. Pour into Molds: Carefully pour the mixture into silicone molds. If you don’t have molds, a shallow 8x8 or 9x9 baking dish can be used, and you can cut the gummies into squares once set.
  6. Set the Gummies: Place the molds in the refrigerator for about 2-3 hours, or until the gummies are firm to the touch.
  7. Enjoy Your Gummies: Once set, pop the gummies out of the molds and enjoy! Store them in an airtight container in the refrigerator for up to two weeks. (Or you can freeze them for longer shelf life.... but this isn’t an issue in our house as I gobble them down within a week).
